"the jewel of wine" - LA JOYA DE VINO
PERIDOT GREEN
Peridot is the crystal green gemstone derived from the mineral Olivine. The earth’s mantle largely consists of Olivine, making Peridot an ever present and integral part of nature.
The Peridot gemstone encaptures and reflects the qualities of our ecologically aware wine-making philosophy.
Our Peridot wines are hand-made as naturally as possible with an emphasis on quality, whilst carefully considering the environmental impact of each step of the wine-making process:
- Our fruit is sourced from relatively isolated dry areas. The vineyards are naturally healthy, due in part to the climate and in part to the lack of neighbouring vineyards that might harbour pests. This results in a minimal amount of spraying required.
- After hand-picking, the fruit is pre-cooled in a shared fruit cooling facility. The fruit arrives cold at the cellar, so no extra cooling capacity for the fruit is required.
- In the cellar we use hand processing methods and gravity as far as possible, making our wine soft to the taste while reducing electricity consumption.
- The cork we use is made from a part of the bark that was once considered a by-product of traditional cork harvesting techniques.
- The bottles are previously used glass bottles, washed and prepared by a local company – 100% recycled.
-
To protect the uncoated labels, the bottles are wrapped in an 80% recycled natural tissue paper.
Our cardboard cartons, brochures and business cards are made from recycled materials. - The water & electricity consumption in the cellar is minimal and far below the industry norm. The carbon emissions we create are calculated regularly and counterbalanced by the planting of trees in the Platbos forest located near our winery in the Overberg.
VEGAN WINES
The gentle hand processing and diligent use of gravity in our cellar results in wine that is pure in fruit and soft to the taste.
Over processing of fruit generally extracts tannins from the grapes skin that tends to result in the wine tasting bitter and harsh.
Tannin is the polyphenol associated with the taste of tree bark, tea leaves, walnut etc.
Animal products such as gelatine, egg white, casein and isinglass are commonly used in the wine industry to remove these tannins.
By not over processing and using only the juice that freely run out of the skin, we avoid extracting unpleasant tannins, thereby eliminating fining with animal products.
Consequently, our wines are elegant, light and 100% Vegan friendly.
